Hidden Gem of Footscray
Matsu introduces the Japanese kaiseki dining experience to Footscray with the aim of creating memorable moments for both the mouth and mind. What began as a semi-hidden, four-seat venue offered diners a rare sense of culinary discovery—an obscure gem from the Far East tucked away in Melbourne’s west. Now in a new space just down the same street, Matsu welcomes up to 12 guests while continuing to honour the same quiet elegance and intimate spirit that defined its beginnings.
The pine tree represents Matsu, symbolising the strong will and dedication that chef-owner Hansol Lee brings to each dish. It also reflects his deep connection to heritage—rooted in tradition, guided by seasonality, and crafted with care.
DINING AT MATSU
Kaiseki is a multi-course meal showcasing the delicacy and deceptive simplicity of Japanese cuisine. Menus* are modelled around seasonality and locality rather than trends. The true highlight is hassun, a selection of small dishes that distills the flavours and themes of the season.
Our inaugural menu presents diners both new and experienced with kaiseki to traditional techniques and staple dishes over courses.
